Some things to keep in mind. Marathon 1 was 2D, UT is 3D. This is a huge visual difference with subtelties that many people fail to realize. When you paint 2D sprites, you're limited to the amount of sprites, but you can paint whatever you like on them. When you work with 3D, you have a one shot chance to make it work every time, and you're limited to the complexity of the model. In 2D, it doesn't matter that your sprites contain x amount of pixel, in 3D it DOES matter how many polys you have on the screen. What you gain in lighting and animation you could lose in pixel information.
That said, the other thing to keep in mind is that this project has been in the working for over 4 years (!!) not 2 like someone else mentioned. Some of the models even preceed that. Also, it is using a 4 year old game engine. If you look at the places where quality _could_ have been chosen over speed and flexibility, you will notice that frequently, it's there.
When this project started out, it was a bunch of very talented, eager young amateurs. Since then, many of us have become professionals at what we do. You will notice a certain progression in the quality of work done throughout the 4 years.
That said, this is not Halo or Doom 3. This is a volunteer project that brings Marathon to Unreal Tournament, and all things considered, together with the intricacies of coordinating a world wide effort over 4 years, to the acclaim that we have, is a fairly amazing feat. I'm personally beyond surprised at where we've gotten... pleasantly so.
