You can always drop the weapon. (Think the default key in UT is semicolon.) I'm not sure if you'll be able to pull it up once it's completely empty though, UT doesn't allow you to if you don't have any ammo.
That always struck me as damn stupid, since generally the only time you'd want to throw a weapon away is if it was empty (or unless you know your opponent has auto-weapon switching on and you want to toss him the ripper or something else really crappy, heh).
